  • 8 oz pasta (penne or fettuccine)
  • 1 lb smoked sausage (sliced)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Green onions (for garnish) Chopped

Cooking

  • In a large pot, heat olive oil over medium heat. Add the sliced sausage and cook until browned.
  • Add diced onion, minced garlic, and diced bell pepper; sauté until softened.
  • Stir in the diced tomatoes and Cajun seasoning; cook for a few minutes until warmed through.
  • Add the pasta and enough water to cover it; bring everything to a boil.
  • Reduce the heat and let it simmer until the pasta is cooked, about 10-12 minutes.
  • Stir in the heavy cream and shredded cheese until melted and creamy.
  • Season with salt and pepper to taste.
  • Serve garnished with chopped green onions.

Notes

For added heat, consider using a spicy sausage or a pinch of red pepper flakes. Adjust the sauce consistency by adding more or less heavy cream.
