Ingredients
  

Pasta and sausage

  • 12 oz pasta (penne or rotini)
  • 1 lb smoked sausage (sliced) Use high-quality sausage for best flavor.

Vegetables

  • 1 bell pepper (diced)
  • 1 onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes

Creamy sauce

  • 1 cup heavy cream Can be substituted with half-and-half or a dairy-free alternative.
  • 1 cup shredded cheese (cheddar or pepper jack)
  • 2 tablespoons Cajun seasoning Adjust based on heat preference.
  • Salt and pepper to taste

Garnish

  • Fresh parsley For garnish.

Preparation

  • In a large pot, cook the pasta according to package instructions. Drain and set aside.
  • In the same pot, add the sliced sausage and cook over medium heat until browned.
  • Add the diced bell pepper, onion, and minced garlic; cook until the vegetables are softened.

Cooking

  • Stir in the diced tomatoes and Cajun seasoning; cook for a few minutes to allow the flavors to meld.
  • Add the heavy cream and bring to a simmer, stirring occasionally.
  • Stir in the cooked pasta and cheese; mix well until the cheese is melted and evenly distributed.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

This dish pairs nicely with a simple green salad or some crusty bread to soak up the creamy sauce. To store leftovers, allow to cool completely and refrigerate for up to 3-4 days. Reheat on medium heat or microwave until heated through.
