  • 1 lb Smoked sausage, sliced
  • 1 cup Rice, uncooked
  • 2 medium Bell peppers, chopped
  • 1 tablespoon Cajun seasoning to taste
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Chicken broth
  • 2 tablespoons Olive oil for cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
  • Stir in the chopped onion, bell peppers, and minced garlic, and sauté until the vegetables are soft, approximately 3-5 minutes.
  • Add the rice and Cajun seasoning, mixing well to combine.
  • Pour in the chicken broth and bring the mixture to a boil.
  • Reduce the heat, cover the skillet, and let it simmer for 20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Serve hot and enjoy!

Notes

Serve directly from the pan; for added flavor, garnish with fresh parsley or green onions. Can be stored in the refrigerator for up to 3 days, or frozen for up to 2 months. Add a splash of chicken broth when reheating to prevent rice from drying out.
