  • 1 medium Onion Diced.

  • 2 cups Chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 2 tablespoons Olive oil For sautéing the vegetables.

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add diced onion and minced garlic, sauté until soft.
  • Slice the smoked sausage and add it to the skillet, cooking until browned.
  • Add diced bell peppers and cook for a few minutes until they soften.
  • Stir in the rice and Cajun seasoning, mixing well to combine.
  • Pour in chicken broth and bring to a boil.
  • Reduce heat, cover, and simmer for 20 minutes or until the rice is cooked and has absorbed the liquid.
  • Fluff with a fork and serve hot.

Notes

Serve directly from the skillet for a rustic feel. Optionally, top with chopped fresh parsley or green onions. Store leftovers in an airtight container for up to 3 days.
