  • 1 medium head cabbage, chopped
  • 1 large onion, chopped
  • 2 large carrots, sliced
  • 2 pieces bell peppers (any color), chopped
  • 3 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes

Broth and Seasonings

  • 6 cups vegetable broth
  • 1-2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground turmeric (optional) Optional for added flavor
  • 1/2 teaspoon black pepper
  • Salt to taste
  • 1 tablespoon lemon juice (optional) Optional for added brightness

Preparation

  • In a large pot, sauté the chopped onions and minced garlic until they turn translucent.
  • Add the carrots, bell peppers, and celery, cooking for a few minutes until they start to soften.
  • Stir in the chopped cabbage, diced tomatoes, and vegetable broth.
  • Season with thyme, turmeric, black pepper, and salt.
  • Bring the soup to a boil, then reduce the heat and let it simmer for 30-40 minutes until the vegetables are tender.
  • Before serving, stir in the lemon juice for a nice, bright flavor.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage. For a creamier texture, blend a portion of the soup.
