  • 2 lbs beef stew meat
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 2 medium tomatoes, diced
  • 1 cup beef broth
  • 1 tsp cumin
  • 1 tsp oregano

  • In a pot, heat olive oil over medium heat.
  • Add the beef and brown it on all sides for about 5-7 minutes.
  • Add the chopped onion, minced garlic, and chopped bell pepper; sauté until softened, about 3-5 minutes.
  • Stir in the diced tomatoes, beef broth, cumin, oregano, salt, and pepper.
  • Bring the mixture to a boil. Then reduce the heat and let it simmer for about 1.5 to 2 hours, or until the beef is fork-tender.
  • Serve the stew warm with flour tortillas on the side.

Notes

For a deeper flavor, consider marinating the beef in spices and broth overnight before cooking. You can add additional vegetables like carrots or potatoes for more nutrition. If you prefer a thicker broth, mix 1 tablespoon of cornstarch with cold water and stir it into the stew during the last 10 minutes of simmering.
