Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower) Choose any type of rice you prefer.
  • 1 cup mixed veggies (broccoli, bell peppers, carrots) Feel free to use other veggies if desired.
  • 2 tablespoons olive oil Use extra virgin olive oil for best flavor.
  • Salt and pepper to taste Adjust seasoning according to your preference.

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Add more for extra spiciness.
  • 1 tablespoon honey Can be adjusted for sweetness.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice Fresh lime juice is recommended.

Instructions
 

Cooking Rice

  • Cook rice according to package instructions. Set aside once ready.

Preparing Chicken

  • While the rice is cooking, cut the chicken breast into bite-sized pieces. Season with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces and sauté for 6-8 minutes until golden brown and cooked through.

Making the Sauce

  • In a small bowl, mix together the sauce ingredients: mayonnaise, sriracha, honey, garlic powder, and lime juice.
  • Adjust to taste by adding more sriracha for spiciness or honey for sweetness.

Combining Ingredients

  • Once the chicken is cooked, toss in mixed veggies and cook for an additional 2-3 minutes until they are just tender but still crisp.
  • Remove the skillet from heat, pour the sauce over the chicken and veggies, stirring to coat everything evenly. Serve over rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.
