  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil

For the Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions
 

Preparation

  • Start by cooking your rice according to package instructions. Set it aside once ready.
  • Cut the chicken breast into bite-sized pieces and season them with salt and pepper.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and sauté for about 6-8 minutes until golden brown and cooked through.
  • In a small bowl, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice.
  • Once the chicken is cooked, toss in your mixed veggies. Cook for another 2-3 minutes until they are just tender.
  • Remove the skillet from heat, pour the sauce over the chicken and veggies, and stir to coat everything evenly.

Serving

  • Serve the Bang Bang Chicken Bowl in a large dish, layering the rice first, followed by the chicken and veggies. Drizzle with extra sauce and garnish with sliced green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. You can freeze the chicken and sauce but store rice and veggies separately for best texture. Substitute mayo with Greek yogurt for a healthier option.
