Baked Crunchy Hot Honey Chicken

Ingredients
  

For the crust

  • 6 cups cornflakes (use gluten-free if needed)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

For the chicken

  • 2 pounds chicken breast tenderloins
  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • Extra virgin olive oil for drizzling

For the hot honey sauce

  • 1/2 cup honey
  • 2-3 tablespoons hot sauce
  • 1-3 teaspoons cayenne pepper Adjust to taste.
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Sea salt

For serving

  • Fresh thyme, cilantro, or parsley For garnish.

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a food processor, combine the cornflakes, parmesan cheese, paprika, onion powder, garlic powder, and a pinch of salt. Pulse until you achieve fine crumbs.
  • Pour the crumbs into a shallow bowl.
  • In another bowl, beat the eggs and add the hot sauce. Add the chicken tenderloins and toss until well coated.
  • Dredge the chicken in the cornflake crumbs, ensuring each piece is fully covered.
  • For a thicker coating, dip the chicken back into the egg mixture, then back into the crumbs before placing it on the baking sheet.

Baking

  • Drizzle the chicken pieces with olive oil and bake for 20-25 minutes, or until the chicken is crisp and fully cooked.

Making the hot honey sauce

  • While the chicken is baking, prepare the hot honey sauce by warming the honey, hot sauce, cayenne pepper, chipotle chili powder, onion powder, garlic powder, and a pinch of salt in a saucepan over low heat.
  • Once the chicken is done cooking, drizzle the warm sauce over the chicken and top with fresh herbs.

Notes

To store leftovers, allow the chicken to cool before transferring it to an airtight container. It can be refrigerated for up to three days. Reheat in the oven at 350°F (180°C) for about 10-15 minutes to regain its crunchiness.
