  • 2 pounds pork (shoulder or tenderloin), cubed Choose high-quality pork for best results.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 5-6 green chiles, roasted and chopped Roast over an open flame or broiler until blackened.
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 2 medium potatoes, diced
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 tablespoon olive oil

Cooking

  • In a large pot, heat the olive oil over medium heat.
  • Add the cubed pork and cook until browned on all sides.
  • Add the chopped onion and garlic, sautéing until the onion is translucent.
  • Stir in the roasted green chiles, chicken broth, diced potatoes, cumin, salt, and pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes or until the pork is tender.
  • Serve hot and enjoy!

Notes

To serve, ladle stew into deep bowls and garnish with fresh cilantro or a dollop of sour cream. Pair with warm tortillas or crusty bread. Store in an airtight container for up to 4 days in the refrigerator or freeze portions for up to 3 months.
