Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • tsp ground cinnamon
  • ¼ tsp ground nutmeg

Wet Ingredients

  • 1 cup brown sugar
  • ½ cup white sugar
  • ¾ cup vegetable oil
  • 2 large eggs At room temperature
  • 2 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, whisk the eggs, vegetable oil, brown sugar, white sugar, and vanilla extract until well combined.
  • Slowly stir the wet ingredients into the dry ingredients until just mixed.
  • Gently fold in the chopped apples until evenly distributed throughout the batter.

Baking

  • Pour the batter into the greased baking pan and smooth the top with a spatula.
  • Bake for 30–35 minutes or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan before slicing into squares.

Notes

Serve this cake warm or at room temperature. Top slices with vanilla ice cream or whipped cream and a sprinkle of powdered sugar for extra delight.
