  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract

Filling Ingredients

  • 2 cups peeled and chopped apples (e.g., Granny Smith or Honeycrisp) Mix of sweet and tart apples adds depth of flavor.
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 tablespoon all-purpose flour (to coat the apples)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a baking pan.
  • In a bowl, mix 2 1/2 cups of flour, 1 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  • In another bowl, cream together 1/2 cup of unsalted butter and 1 cup of granulated sugar until fluffy. Then add in the 2 eggs, 1 cup of sour cream, and 1 teaspoon of vanilla extract.
  • Gradually add the dry ingredients to the wet mixture.

Filling

  • In a separate bowl, combine 2 cups of chopped apples, 1/2 cup of packed brown sugar, 1 tablespoon of ground cinnamon, and 1 tablespoon of flour.

Assembly and Baking

  • Layer half of the cake batter in the prepared pan.
  • Spread the apple filling over the batter, followed by topping with the remaining cake batter.
  • Bake for about 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool before glazing or serving.

Notes

This coffee cake can be served warm or at room temperature. You may dust it with powdered sugar or drizzle a simple glaze on top.
