Ingredients
  

For the Apple Cider Reduction

  • 2 cups apple cider Reduce until about 1/2 cup remains.

For the Cheesecake Filling

  • 6 oz cream cheese, cold Ensure it's at room temperature for smooth blending.
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla

For the Apple Cider Cookies

  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction

For The Spiced Sugar

  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • pinch ground allspice
  • 1-2 tbsp salted butter, melted

Instructions
 

Prepare the Apple Cider Reduction

  • In a saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Set aside to cool.

Make the Cheesecake Filling

  • In a mixing bowl, blend cream cheese, sugar, and vanilla until smooth. Chill until ready to use.

Prepare the Cookie Dough

  • In a separate bowl, whisk together flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt.
  • In another bowl, beat softened butter and brown sugar until creamy. Add the egg yolks, vanilla, and apple cider reduction. Gradually mix in the dry ingredients.

Combine

  • Scoop a tablespoon of cookie dough, flatten it, and place a dollop of cheesecake filling in the center. Cover with another tablespoon of dough. Form into a ball and place on a baking sheet.

Make the Spiced Sugar

  • In a small bowl, mix sugar, cinnamon, nutmeg, and allspice. Roll the filled cookies in the spiced sugar and brush with melted butter.

Bake

  • Preheat the oven to 350°F (175°C) and bake cookies for about 12-15 minutes or until golden.

Notes

For a beautiful presentation, arrange the cookies on a rustic wooden platter or a cake stand. Dust them with extra powdered sugar or drizzle with caramel for an added touch. Pair these cookies with a warm cup of cider or your favorite fall beverage for a cozy experience.
