Almond croissants are a delightful treat that combines flaky croissants with a sweet almond filling, perfect for breakfast, brunch, or a special snack.

Ingredients
  

For the Simple Syrup

  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon dark rum or 1 teaspoon vanilla extract Use vanilla extract for a non-alcoholic version.

For the Frangipane Filling

  • 1 cup almond flour
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1/2 cup unsalted butter at soft room temperature Make sure butter is at room temperature for easy mixing.
  • 1 cup powdered sugar
  • 1 large egg
  • 1/2 teaspoon almond extract

For Assembly

  • 6 pieces store-bought or leftover croissants Homemade croissants can also be used.
  • 1/2 cup sliced almonds
  • Powdered sugar for dusting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with a silicone baking mat or parchment paper.
  • To create the simple syrup, mix together the granulated sugar, water, and rum in a small saucepan. Heat over medium heat until the sugar dissolves completely. Set it aside to cool.
  • For the frangipane filling, whisk together the almond flour, all-purpose flour, and kosher salt in a bowl.
  • In another bowl, cream together softened butter and powdered sugar until smooth.
  • Add the egg and almond extract to the butter mixture, stirring until everything is blended well.
  • Fold in the almond flour mixture until fully combined and smooth.

Assembly

  • Take the croissants and slice them in half horizontally. Brush the cut sides generously with the simple syrup.
  • Spread about 2/3 of the frangipane on the bottom halves of each croissant. Replace the tops.
  • Use the remaining frangipane to spread on top of each croissant.
  • Sprinkle the sliced almonds on top and gently press them in to stick.

Baking

  • Bake in the preheated oven for about 20 minutes or until the almonds are toasted and the frangipane is slightly browned.
  • Once done, serve warm or at room temperature, and dust with powdered sugar before serving.

Notes

Almond croissants are best enjoyed warm. They can be paired with fresh fruit or a cup of coffee. Store in an airtight container at room temperature for up to two days, or in the fridge for up to a week. For longer storage, freeze the croissants and reheat in the oven when ready.
