Ingredients

Crust:

  • 1-3/4 cup Chocolate Graham Crackers (crushed)
  • 1/3 cup Margarine (melted)

Filling:

  • 3-8 oz packages Cream Cheese
  • 1 can Sweetened Condensed Milk
  • 1/2 cup Sugar
  • 3 Eggs
  • 3 Tbsp Lemon Juice
  • 1 Tbsp Vanilla
  • 3/4 cup Chocolate Chips

Topping:

  • 1/4 cup mini chocolate chips
  • 1/2 cup caramel ice cream topping
  • 1/2 cup hot fudge ice cream topping
  • 1/4 cup chopped pecans

Directions

  1. Preheat your oven to 300°F (150°C).
  2. For the crust: Mix crushed chocolate graham crackers with melted margarine. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  3. For the filling: Beat cream cheese until smooth. Gradually add sweetened condensed milk and sugar, beating until creamy. Add eggs one at a time, beating just until blended. Stir in lemon juice and vanilla. Fold in chocolate chips.
  4. Pour the filling over the crust in the springform pan. Bake for 1 hour, or until set (the center may be slightly wobbly).
  5. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of the pan to loosen; cool for another hour.
  6. Refrigerate overnight.
  7. For the topping: Before serving, sprinkle the top with mini chocolate chips, drizzle with caramel and hot fudge topping, and garnish with chopped pecans.

Cook Notes

Cooling the cheesecake slowly and refrigerating it overnight ensures the filling sets properly for easy slicing.
