Ingredients:

  • 4 lb. russet potatoes, skin-on, washed and dried
  • 4 tbsp. unsalted butter
  • ¼ cup flour
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 4 cups beef stock
  • 2 tbsp. ketchup
  • 1 tbsp. cider vinegar
  • 1 tbsp. whole green peppercorns
  • ½ tsp. Worcestershire sauce
  • Kosher salt and freshly ground black pepper
  • Canola oil, for frying
  • 2 cups cheddar cheese curds

Directions:

  1. Prepare Potatoes: Cut potatoes into fries, soak in cold water, and dry thoroughly.
  2. Fry Potatoes: Heat oil, fry potatoes until golden, and drain on paper towels. Season with salt.
  3. Make Gravy: In a pan, melt butter, sauté shallot and garlic, add flour, then gradually whisk in beef stock. Add ketchup, vinegar, peppercorns, Worcestershire sauce, salt, and pepper. Simmer until thickened.
  4. Assemble Poutine: Place fries on a serving dish, scatter cheese curds, and ladle hot gravy over the top.
