Ingredients

  • 1 sheet Puff Pastry, thawed
  • Strawberry Filling: 1 cup strawberries (sliced), ½ cup sugar, ¼ cup lemon juice
  • Cheesecake Filling: 1- 8-ounce package of cream cheese (softened), ¼ cup granulated sugar, 2 tablespoons heavy cream
  • Strawberry Layer: 1 cup fresh strawberries (sliced), ¼ cup powdered sugar

Directions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry and cut into squares. Place on the baking sheet.
  3. For the strawberry filling, combine strawberries, sugar, and lemon juice in a saucepan. Simmer until thickened, then cool.
  4. For the cheesecake filling, mix cream cheese, sugar, and heavy cream until smooth.
  5. Place a spoonful of cheesecake filling on each pastry square, top with the strawberry filling, and then with fresh strawberry slices.
  6. Bake for 15-20 minutes or until the pastry is golden and puffed.
  7. Sprinkle with powdered sugar before serving.

Cook Notes

  • The fillings can be prepared in advance and refrigerated.
  • Be careful not to overbake the pastry to avoid it becoming too hard.
