Ingredients
- 3 lb yellow squash, sliced or diced
- 1/2 cup diced Vidalia onion (optional)
- 1 (10.5 oz.) can cream of mushroom or chicken soup
- 1 cup mayonnaise
- 1 egg
- 8 oz shredded cheddar cheese (sharp is recommended)
- 1 tsp salt
- 1/2 tsp fresh ground black pepper
TOPPING:
- 2 sleeves of Ritz crackers, crushed
- 1 stick melted butter
Directions
- Preheat oven to 350°F (175°C). Lightly grease a casserole dish.
- Boil the squash and onion in water until tender. Drain well.
- In a bowl, mix the cream of mushroom or chicken soup, mayonnaise, egg, cheese, salt, and pepper. Add the drained squash and onions, and mix well.
- Transfer the mixture to the prepared casserole dish.
- For the topping, combine the crushed crackers and melted butter. Sprinkle over the squash mixture.
- Bake for 30 minutes or until the topping is golden brown.
