ROAST CARROTS, POTATOES & ONIONS

My dad used to make something similar, he would use a jar of pearl onions, and half a jar of minced garlic, and add a little worcestershire, then throw it on the grill. Soooo yummy!
There’s something so comforting about potatoes. Mashed potatoes, fried potatoes, or roasted potatoes, they are all comforting.

When I was growing up, my parents would often make fried potatoes, carrots, and onions. It was a little bit time-consuming, you had to be involved in the cooking process – stirring the potatoes often so that they wouldn’t stick.

Ingredients :

° 2 carrots pounds
° 6 whole potatoes
° 1 sweet onion
° Three cloves of garlic
° 6 tablespoons olive oil
° ½ teaspoon dried thyme
° ½ teaspoon dried parsley
° Salt and pepper to taste

* Preparation :

Preheat oven to 475 degrees F.
Peeled carrots, cut to small pieces. Cut the potatoes into small pieces, leaving the peel on them. Cut the onions into eighths. Mince the garlic.
Blending carrots, potatoes, &; onions in bowl.Drizzle vegetables with olive oil & adding garlic, thyme, parsley, salt (to taste) & pepper (to taste). Stirring to vegetables are covered with olive oil & spices. Placing on a cookie sheet in one layer & covering with foil.
Roast for forty-five minutes.Remove foil and continue baking for another half hour or until golden brown, stirring every 10 minutes.
