Ingredients

Directions

  1. Prepare the Dough: In a large mixing bowl, combine flour, 50g sugar, yeast, and lemon zest. Warm half of the milk and dissolve the yeast in it. Add this mixture to the flour, along with the whole egg and softened butter. Knead into a smooth dough, then let it rest for 1 hour.
  2. Make the Custard Filling: Heat the remaining milk in a saucepan and whisk in the starch, egg yolk, and 50g sugar until thickened. Let cool.
  3. Add Raisins: Knead the raisins into the rested dough.
  4. Shape the Pastries: Divide the dough into equal parts, roll out into circles, and add a spoonful of custard in the center of each. Fold the edges over slightly.
  5. Final Rise: Place the shaped pastries on a baking sheet lined with parchment paper. Let them rise for another hour.
  6. Bake: Preheat the oven to 350°F (175°C). Brush the pastries with the beaten egg, then bake for 20 minutes, or until golden brown.
  7. Serve: Let the pastries cool slightly, then dust with powdered sugar before serving.
