Ingredients

Cake:

  • 1 (15.25 oz.) package yellow cake mix
  • 1 cup of water
  • 3 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup crushed pineapple, from 1 (20 oz.) can, juices reserved
  • 1 cup shredded coconut
  • 1/4 cup pecans, roughly chopped

Glaze:

  • 1 1/2 cups powdered sugar
  • Remaining pineapple and pineapple juice
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/2 cup shredded coconut
  • 1/4 cup pecans, roughly chopped
  • Whipped cream, optional, for garnish

Directions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix Cake Ingredients: In a large mixing bowl, combine the cake mix, water, eggs, and melted butter. Beat until well blended. Stir in the crushed pineapple, coconut, and chopped pecans.
  3. Bake: Pour the batter into the prepared baking dish and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  4. Prepare the Glaze: While the cake is baking, mix together the powdered sugar, remaining pineapple and juice, melted butter, coconut, and pecans in a bowl until smooth.
  5. Glaze the Cake: Once the cake is done, remove it from the oven and while still hot, pour the glaze over the top, spreading evenly.
  6. Cool and Serve: Allow the cake to cool slightly before serving. Garnish with whipped cream if desired.
