Print Friendly, PDF & Email

Prepare Time

  • Preparation Time: 10 minutes
  • Cooking Time: 15 minutes
  • Total Time: 25 minutes

Ingredients

  • 1 cup unsalted butter, cut into pieces
  • 1 cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon Kosher salt, or 1/2 teaspoon table salt
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (milk chocolate or semi-sweet)
  • 2-4 tablespoons chopped pecans or almonds

Directions

  1. Prepare Pan: Line a baking sheet with parchment paper or a silicone baking mat.
  2. Combine Ingredients: In a heavy-bottomed saucepan, combine the butter, sugar, water, and salt. Cook over medium heat, stirring constantly until the mixture reaches 300°F (149°C), the hard crack stage on a candy thermometer.
  3. Add Vanilla: Once the toffee reaches the correct temperature, remove from heat and stir in the vanilla extract.
  4. Pour and Set: Carefully pour the hot mixture onto the prepared baking sheet. Spread into an even layer.
  5. Add Chocolate and Nuts: Sprinkle the chocolate chips over the hot toffee. Let sit for a few minutes until the chips melt, then spread the chocolate evenly. Sprinkle with chopped nuts.
  6. Cool: Allow the toffee to cool completely. Once set, break into pieces.

Cook Notes

If the chocolate doesn’t melt completely from the heat of the toffee, pop the tray into a warm oven for a minute to help it along.

Variations

  • White Chocolate Delight: Substitute milk or semi-sweet chocolate chips with white chocolate and sprinkle with dried cranberries.
  • Salted Caramel Toffee: Add a generous sprinkle of sea salt over the melted chocolate for a salty-sweet flavor.

Keto Version

Use a keto-friendly sweetener like erythritol, keto chocolate chips, and unsalted butter for a low-carb alternative.

Low-Carb Version

Similar to the keto version, replace sugar with a low-carb sweetener and choose dark chocolate with a high cocoa content to reduce overall sugar intake.
