Pecan Cheesecake Squares

Ingredients

  • Shortbread Layer:
  • 1½ cups all-purpose flour,
  • ¾ cup light brown sugar,
  • ½ cup butter,
  • ½ cup finely chopped pecans.
  • Cheesecake Layer:
  • 2 (8 ounce) packages cream cheese,
  • ½ cup sugar,
  • ½ cup milk,
  • 2 teaspoons vanilla extract.
  • Pecan Pie Layer:
  • ¾ cup brown sugar,
  • ½ cup light corn syrup,
  • ⅓ cup melted butter,
  • 3 large eggs,
  • ¼ teaspoon salt,
  • ½ teaspoon vanilla extract,
  • 1½ cups pecans.

Directions

  1. Preheat the oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. Combine flour, brown sugar, and butter for the shortbread layer. Press into the bottom of the pan and sprinkle with pecans.
  3. Bake for 10-15 minutes.
  4. Mix cream cheese, sugar, milk, and vanilla for the cheesecake layer. Spread over the baked shortbread.
  5. Combine brown sugar, corn syrup, butter, eggs, salt, and vanilla for the pecan pie layer. Stir in pecans and pour over the cheesecake layer.
  6. Bake for 35-45 minutes until set.
  7. Cool completely, then chill before cutting into squares.

Cook Notes

  • Watch the oven carefully to prevent the top layer from burning.

Variations

  • Chocolate Chip Pecan: Add chocolate chips to the pecan pie layer.
  • Maple Pecan: Substitute maple syrup for corn syrup.

Keto Version Use almond flour for the base, a keto-friendly sweetener, and sugar-free syrup for the pecan layer.

Low-Carb Version Replace flour with almond or coconut flour and use low-carb sweeteners.
