Ingredients

For the Cookie Layer:

  • 1 bag peanut butter chips
  • 2 tbsp butter
  • 2/3 cup corn syrup
  • 2 cups crispy rice cereal
  • 2 cups salted peanuts
  • Pinch of salt

Directions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper and lightly grease it.
  2. Prepare the Cookie Layer: In a large bowl, mix together the cake mix, melted butter, egg, and a pinch of salt until a soft dough forms. Press this mixture evenly into the bottom of the prepared pan.
  3. Bake: Place the pan in the oven and bake for 12-15 minutes, or until the edges start to turn golden brown.
  4. Add Marshmallows: Remove the pan from the oven and sprinkle the mini marshmallows over the cookie layer. Return to the oven for an additional 2-3 minutes, or until the marshmallows begin to puff up.
  5. Prepare the Topping: In a saucepan over low heat, melt the peanut butter chips with butter and corn syrup, stirring until smooth. Remove from heat and stir in the crispy rice cereal, salted peanuts, and a pinch of salt.
  6. Assemble: Pour the peanut and cereal mixture over the marshmallow layer, spreading evenly. Press down gently to ensure the layers adhere.
  7. Cool: Allow the bars to cool completely in the pan on a wire rack. Once set, cut into bars or squares.
  8. Serve and Enjoy: Serve at room temperature for the best flavor and texture.
