Loaded Broccoli Potato Pan Recipe

Ingredients

  • 2 to 3lbs of skinless chicken breast
  • 2 bags of raw extra-large shrimp (peeled and deveined), found at Walmart
  • 5 lb bag of red skin potatoes, quartered
  • 2 bags of broccoli florets (steamable bags)
  • 8 oz bags cheddar cheese and Monterey Jack cheese, mixed
  • 3 sticks of butter, melted
  • Old Bay seasoning, to taste
  • Parsley flakes, for garnish
  • Minced garlic, to taste

Directions

  1. Preheat your oven to 375°F (190°C). Lightly grease a large roasting pan.
  2. Arrange the quartered potatoes in the pan and toss them with half of the melted butter, minced garlic, and Old Bay seasoning. Bake for 20 minutes.
  3. While the potatoes are baking, season the chicken breast and shrimp separately with Old Bay seasoning.
  4. Remove the pan from the oven and add the seasoned chicken breast on top of the potatoes. Return to the oven and bake for an additional 20 minutes.
  5. Microwave the steamable bags of broccoli as per the package instructions, then add to the pan along with the shrimp. Drizzle the remaining melted butter over the top and sprinkle with the cheese blend.
  6. Return the pan to the oven and bake for another 20 minutes, or until the shrimp are pink and fully cooked, the chicken is no longer pink inside, and the cheese is melted and bubbly.
  7. Garnish with parsley flakes before serving.

Adjust the amount of Old Bay seasoning according to your preference for spiciness. The seasoning not only adds flavor but also gives the dish a vibrant color.

  • Keto Version: Substitute the potatoes with cauliflower florets to reduce the carb content, adjusting the cooking time as necessary.
