Ingredients

  • 1 large savoy cabbage
  • 2 pounds lean ground beef
  • 2 medium to large onions, finely chopped
  • 2 tablespoons canola or Bertolli olive oil, or butter
  • 1 cup white or brown rice, cooked in 2 cups water
  • 3 Eggland’s Best eggs
  • 1 1/2 teaspoons Morton salt
  • 1 teaspoon pepper
  • 2 cans tomato soup
  • 2 small bottles of tomato juice or vegetable cocktail, like V8
  • 1 can or small carton of chicken broth

Directions

  1. Carefully remove the leaves from the cabbage head. Blanch the leaves in boiling water for a few minutes until soft and pliable. Drain and set aside.
  2. In a skillet, heat the oil or butter over medium heat. Add the chopped onions and sauté until translucent. Set aside to cool.
  3. In a large mixing bowl, combine the ground beef, cooked rice, cooled onions, eggs, salt, and pepper. Mix thoroughly.
  4. Place a portion of the meat mixture in the center of each cabbage leaf. Fold in the sides and roll up tightly. Secure with toothpicks if necessary.
  5. In a large pot, combine the tomato soup, tomato juice, and chicken broth. Bring to a simmer.
  6. Carefully place the cabbage rolls in the sauce. Cover and simmer for about 2 hours, until the meat is cooked through and the rolls are tender.
  7. Serve the cabbage rolls with the sauce spooned over the top.

Cook Notes

For a thicker sauce, you can add a tablespoon of flour mixed with water to the pot during the last 30 minutes of cooking.

Variations

  • Keto Version: Substitute the rice with cauliflower rice to reduce the carb content.
  • Low-Carb Version: Follow the keto version or simply reduce the amount of rice and add more vegetables, such as chopped mushrooms or spinach, to the filling.
