Ingredients

  • 2 cups masa harina (corn flour)
  • 1 1/2 cups warm water
  • 1/2 teaspoon salt
  • 1 cup shredded cheese (such as mozzarella or Monterey Jack)
  • 2 tablespoons vegetable oil, divided

Directions

  1. Make the Dough: In a large bowl, combine masa harina and salt. Gradually add warm water and mix until the dough comes together. Knead it for a few minutes until the dough is smooth and pliable.
  2. Divide and Fill: Divide the dough into 8 equal portions. Roll each portion into a ball. Make a well in the center of each ball and fill it with cheese.
  3. Shape the Pupusas: Carefully close the dough around the cheese, making sure it is completely sealed. Then, flatten the ball into a disc about 1/4 inch thick, taking care to keep the cheese enclosed without it spilling out.
  4. Cook the Pupusas: Heat a tablespoon of vegetable oil in a skillet over medium heat. Cook the pupusas for about 4-5 minutes on each side, or until golden brown and the cheese is melted.
  5. Serve: Serve hot with curtido and tomato salsa.

Cook Notes

For an even distribution of heat and to prevent sticking, use a well-seasoned cast iron skillet when cooking pupusas.
