Ingredients
- 4 large boneless, skinless chicken breasts
- 3 cups broccoli florets, steamed
- 1 1/2 cups shredded cheddar cheese
- 2 oz. cream cheese, at room temperature
- 1 Tablespoon chopped fresh chives or other fresh herbs
- Garlic powder, cumin, or other spices to taste
- 1/4 cup olive oil, divided
Directions
- Preheat the oven to 375°F (190°C).
- Cut a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, mix together the steamed broccoli, cheddar cheese, cream cheese, chives, and desired spices.
- Stuff each chicken breast with the broccoli and cheese mixture, then secure the openings with toothpicks.
- Season the outside of the chicken breasts with additional spices, salt, and pepper.
- Heat half of the olive oil in a large oven-safe skillet over medium heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.

For a crispier crust, you can dredge the stuffed chicken breasts in flour before searing.
