Ingredients

  • 4 large boneless, skinless chicken breasts
  • 3 cups broccoli florets, steamed
  • 1 1/2 cups shredded cheddar cheese
  • 2 oz. cream cheese, at room temperature
  • 1 Tablespoon chopped fresh chives or other fresh herbs
  • Garlic powder, cumin, or other spices to taste
  • 1/4 cup olive oil, divided

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, mix together the steamed broccoli, cheddar cheese, cream cheese, chives, and desired spices.
  4. Stuff each chicken breast with the broccoli and cheese mixture, then secure the openings with toothpicks.
  5. Season the outside of the chicken breasts with additional spices, salt, and pepper.
  6. Heat half of the olive oil in a large oven-safe skillet over medium heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for about 20 minutes, or until the chicken is cooked through.
  8. Let the chicken rest for a few minutes before serving.

Cook Notes

For a crispier crust, you can dredge the stuffed chicken breasts in flour before searing.

  • Substitute cheddar with other types of cheese like mozzarella or Gouda.
  • Add chopped bacon or ham to the stuffing for extra flavor.
