Ingredients

  • 2 large eggs
  • 3 tablespoons whole milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (scooped and leveled), plus 1 extra teaspoon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup chopped walnuts, plus extra for optional garnish

Directions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the softened butter, white sugar, and brown sugar until light and fluffy.
  3. Mash the bananas and beat them into the butter mixture along with the eggs, milk, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and cinnamon. Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated.
  5. Fold in the chopped walnuts, reserving some for garnish if desired.
  6. Scoop the batter into the prepared muffin tin, filling each cup about ¾ full. Sprinkle with reserved walnuts.
  7. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
