  • 150g / 5oz streaky bacon, cooked and chopped
  • 10 cups cos / romaine lettuce, chopped, washed & dried (Note 5)

  • 2 – 4 eggs, cooked to your taste, peeled and halved
  • 500g / 1lb chicken breast fillets (2 pieces)
  • 1/2 tsp EACH salt and pepper
  • 1 tbsp olive oil

Directions:

  1. Dressing:

    • Whizz all ingredients in a food processor until smooth, starting with 3 tbsp milk.

    • Set aside for 20 minutes to allow flavors to develop.
  2. Bacon:

    • Place bacon into a cold skillet (no oil) and turn to medium-high. Cook until golden, then turn over to cook the other side until golden. Remove to paper towels, cool, then chop.
  3. Garlic Croutons:

    • Toast bread in the toaster for 1 minute (or use the oven for 2 minutes each side) until dried but not browned.
    • Rub both sides with the cut side of garlic.
    • Remove crusts from bread (optional), cut into cubes, drizzle with olive oil, sprinkle with salt, and bake until golden.
  4. Assemble:

    • Place lettuce in a bowl, add 1/2 the dressing, and toss well. Taste and add more dressing if desired.
    • Transfer to a serving bowl, top with chicken and egg if using, then scatter over bacon and croutons. Sprinkle with parmesan and serve!
  5. OPTIONAL EXTRAS – Chicken & Egg:

    • Eggs: Place eggs in a saucepan with water, bring to a simmer, then cook for 3-6 minutes based on desired doneness.
    • Chicken: Pound chicken to even thickness, season, and cook in the bacon fat. Let rest before slicing.

How to Serve Caesar Salad

Serve the Caesar Salad immediately once assembled, allowing guests to enjoy the crispy bacon, crunchy croutons, and creamy dressing fresh. It pairs wonderfully with grilled chicken for a heartier meal.

How to Store Caesar Salad

If you have leftover salad, store the components separately to maintain freshness. Keep the dressing in a sealed container in the fridge for up to a week. The chopped lettuce should be stored in an airtight container and consumed within a couple of days to prevent wilting.

Tips to Make Caesar Salad

  • Use fresh ingredients for the best flavor, especially the lettuce and parmesan cheese.
  • Adjust the garlic and anchovy based on your preference for a stronger or milder flavor.
  • For extra crunch, consider adding nuts like pine nuts or walnuts.

Variation

For a twist, try adding grilled shrimp or a mix of other greens, such as arugula or spinach, along with the romaine lettuce. You can also incorporate different types of fish for extra protein.
