This is the perfect recipe for getting picky eaters to eat their vegetables. It’s packed with over two cups of shredded vegetables!

It’s also a lot healthier than traditional sweet zucchini/carrot cakes or bars, with less sugar and sweeteners, but it’s soo yummy that your whole family will gobble it up.

If you want it even healthier, you can omit the cream cheese frosting, but I love the extra sweetness that the frosting adds!

The lemon in the cream cheese frosting is the perfect compliment to the ginger and cinnamon in the bars! Enjoy!
