Ingredients

  • 1 medium zucchini, grated (do not squeeze out the moisture)
  • 1/4 red capsicum (optional), finely diced
  • 1 cup grated cheese(s) (mix of your favorite cheeses)
  • 2 large eggs
  • Salt & pepper to taste, plus preferred seasonings
  • 125g (1 cup) all-purpose flour
  • 1 tsp baking powder
  • Butter, for greasing the muffin tin

Directions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or line it with muffin papers.
  2. Mix Ingredients: In a large bowl, combine the grated zucchini, diced red capsicum, and grated cheese. In a separate small bowl, beat the eggs with salt, pepper, and any other preferred seasonings.
  3. Combine Wet and Dry Ingredients: Add the beaten eggs to the zucchini mixture. Sift in the flour and baking powder. Gently fold the mixture together until just combined, being careful not to overmix.
  4. Spoon into Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake: Bake in the preheated oven for 20 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Cook Notes

For a lighter version, you can substitute half of the all-purpose flour with whole wheat flour.
