Ingredients
- 1 medium zucchini, grated (do not squeeze out the moisture)
- 1/4 red capsicum (optional), finely diced
- 1 cup grated cheese(s) (mix of your favorite cheeses)
- 2 large eggs
- Salt & pepper to taste, plus preferred seasonings
- 125g (1 cup) all-purpose flour
- 1 tsp baking powder
- Butter, for greasing the muffin tin
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with butter or line it with muffin papers.
- Mix Ingredients: In a large bowl, combine the grated zucchini, diced red capsicum, and grated cheese. In a separate small bowl, beat the eggs with salt, pepper, and any other preferred seasonings.
- Combine Wet and Dry Ingredients: Add the beaten eggs to the zucchini mixture. Sift in the flour and baking powder. Gently fold the mixture together until just combined, being careful not to overmix.
- Spoon into Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake: Bake in the preheated oven for 20 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.
- Cool and Serve: Let the muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Cook Notes
For a lighter version, you can substitute half of the all-purpose flour with whole wheat flour.
