- Total Time: 1 hour 15 minutes
Ingredients
- 2 lbs ground beef 85/15
- 29 ounces canned tomato sauce
- 29 ounces canned kidney beans, not drained
- 29 ounces canned pinto beans, not drained
- 28 ounces canned tomatoes, chopped, not drained
- 1 yellow onion, diced
- 1 diced jalapeño, de-seeded and de-veined
- 2 stalks celery, chopped
- 1 green bell pepper, chopped
- 1 tablespoon cumin powder
- 1/4 cup chili powder
- 1 teaspoon black pepper
- 2 teaspoons salt
- 1 cup water
- 1 tablespoon butter
Directions
- In a large pot, melt the butter over medium heat. Add the onions, celery, bell pepper, and jalapeño. Sauté until the vegetables are softened.
- Add the ground beef to the pot. Cook until the beef is browned, breaking it up with a spoon as it cooks.
- Once the beef is cooked, add the tomato sauce, kidney beans, pinto beans, chopped tomatoes, cumin, chili powder, black pepper, salt, and water.
- Stir everything together and bring to a simmer. Reduce the heat to low and let the chili simmer, uncovered, for about 1 hour, stirring occasionally.
- Adjust seasoning to taste before serving.
Cook Notes
For a thicker chili, simmer for an additional 15-30 minutes, or until it reaches your desired consistency.
Variations
- Add corn or carrots for extra sweetness and texture.
- Use ground turkey or chicken for a lighter version.
Keto Version
Replace the beans with low-carb vegetables like zucchini or mushrooms and use a keto-friendly thickener if desired.
