Ingredients

  • 2 lbs ground beef 85/15
  • 29 ounces canned tomato sauce
  • 29 ounces canned kidney beans, not drained
  • 29 ounces canned pinto beans, not drained
  • 28 ounces canned tomatoes, chopped, not drained
  • 1 yellow onion, diced
  • 1 diced jalapeño, de-seeded and de-veined
  • 2 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon cumin powder
  • 1/4 cup chili powder
  • 1 teaspoon black pepper
  • 2 teaspoons salt
  • 1 cup water
  • 1 tablespoon butter

Directions

  1. In a large pot, melt the butter over medium heat. Add the onions, celery, bell pepper, and jalapeño. Sauté until the vegetables are softened.
  2. Add the ground beef to the pot. Cook until the beef is browned, breaking it up with a spoon as it cooks.
  3. Once the beef is cooked, add the tomato sauce, kidney beans, pinto beans, chopped tomatoes, cumin, chili powder, black pepper, salt, and water.
  4. Stir everything together and bring to a simmer. Reduce the heat to low and let the chili simmer, uncovered, for about 1 hour, stirring occasionally.
  5. Adjust seasoning to taste before serving.

Cook Notes

For a thicker chili, simmer for an additional 15-30 minutes, or until it reaches your desired consistency.

  • Use ground turkey or chicken for a lighter version.
