Ingredients:

  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup (1/2 stick) butter, melted and cooled slightly
  • 1 cup firmly packed brown sugar
  • 1 cup mashed really ripe bananas (2 to 3 medium)
  • 1/2 cup unsweetened applesauce
  • 1 large egg
  • 1 teaspoon vanilla
  • 2-1/2 cups old-fashioned rolled oats (not instant)
  • 1 cup chopped nuts, optional

Directions:

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and nutmeg. Set aside.
  3. In a large mixing bowl, combine melted butter and brown sugar until well blended.
  4. Add mashed bananas, applesauce, egg, and vanilla to the butter-sugar mixture. Mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in rolled oats and nuts (if using) until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
