Ingredients

  • 1 cup boiled potatoes
  • Salt to taste
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon red chili powder
  • 1 cup milk
  • Chopped veggies as preferred
  • 1/2 tablespoon baking powder
  • 1 cup wheat flour
  • Oil for frying

Directions

  1. In a large bowl, mash the boiled potatoes until smooth.
  2. Season the mashed potatoes with salt, black pepper, and red chili powder.
  3. Stir in the chopped vegetables of your choice.
  4. Add the baking powder and wheat flour to the mixture and mix well.
  5. Gradually add the milk to the mixture to form a thick batter.
  6. Heat oil in a frying pan over medium heat.
  7. Spoon the batter into the pan, forming small, flat cakes.
  8. Fry each side for about 5-7 minutes or until golden brown and crispy.
  9. Remove from the pan and drain on paper towels to remove excess oil.
  10. Serve hot.

Cook Notes

  • Adjust the consistency of the batter with more or less milk as needed. It should be thick enough to hold its shape in the pan.

Variations

  • Cheesy Vegetable Roastie: Add grated cheese to the batter for a cheesy twist.
  • Spicy Roastie: Incorporate finely chopped jalapeños or green chilies for added heat.

Keto Version

  • Use almond flour instead of wheat flour and unsweetened almond milk instead of regular milk.

Low-Carb Version

  • Substitute wheat flour with coconut flour or another low-carb flour alternative.
