the best garlic potato cheese tacos

Ingredients:

I made the best garlic potato cheese tacos I’ve ever made in my life, thanks to things ive learned in this group. My daughter said they were the best thing shes eaten in her life!! I think it was probably an exaggeration lol, but im still super proud!!! You guys are seriously amazing p.s before this group i never cooked anything even close to this!! 

Recipe/ingredient

Corn tortillas

8 peeled potatoes

1 c Monterey jack shredded cheese

3 garlic cloves

1/2 c milk

1/2 stick of butter

2 tbsp salt or more if you like

Oil

Garnish

Sour cream

Salsa

Queso fresco

Cebollitas curtadas (pickled onion)

Shredded cabbage

You can put as much garnish as you like.. you can add other things as well. Truly whatever and however much you like!!

Directions:

Flour paste

I didn’t measure but a good guesstimate is 2 tbsp flour to 3 tbsp water, maybe less. You want it pretty thick and sticky

First peel and put your potatoes in cold water and salt, then boil til tender, about 20 min. Put them in a mixing bowl, add garlic, milk and butter and mix. I like mine a little lumpy. Then add the cheese and mix in in. Put aside. Warm your tortillas in the microwave on 30 sec intervals so they are pliable and wont crack. Put a couple spoonfuls of the potatoes in them and fold. I used flour with water, to make a paste and put it on the inside edges of the tacos to hold them shut. My recipe made 12 tacos. Put the oil in a pan and heat. Then when hot enough fry tacos to golden brown. Flip over to get both sides crispy and golden. As they are done lay them on a paper towel to soak extra oil off. Then garnish with whatever you like! I made my green avacado salsa and the cebollita especially for this dinner. I posted that recipe yesterday. Then enjoy your tacos!!!
