Ingredients
For the Rolls:
- 2 cups milk
- 3 Tablespoons butter
- 1 Tablespoon active dry yeast
- 1/2 cup warm water (110°F to 115°F)
- 1/2 cup sugar, divided
- 1/2 cup honey
- 7 1/2 cups flour (up to 1/2 cup more or less), divided
- 2 eggs
- 2 tsp salt
- Extra butter for brushing
For the Honey Cinnamon Butter:
- 1 stick (4 ounces) unsalted butter, at room temperature
- 1/4 cup powdered sugar
- 1/4 cup honey
- 1 teaspoon ground cinnamon
Directions
- Warm the milk and melt the 3 tablespoons of butter in it. Set aside to cool to lukewarm.
- In a small bowl, dissolve the yeast in the warm water with a teaspoon of sugar. Let it sit for about 5 minutes, until it’s frothy.
- In a large bowl, combine the lukewarm milk mixture, remaining sugar, honey, and half of the flour. Mix well.
- Add the eggs, salt, and enough remaining flour to form a soft dough.
- Turn the dough out onto a floured surface and knead until smooth and elastic, about 6-8 minutes.
- Place the dough in a greased bowl, turning once to grease the top. Cover and let it rise in a warm place until doubled, about 1 hour.
- Punch down the dough and turn it onto a lightly floured surface. Divide the dough into small pieces and shape each into a roll.
- Place the rolls on greased baking sheets, cover, and let them rise until doubled, about 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake the rolls for 15-20 minutes or until golden brown. Brush with melted butter immediately after taking them out of the oven.
For the Honey Cinnamon Butter:
- In a mixing bowl, beat the room temperature butter until smooth.
- Add powdered sugar, honey, and cinnamon; beat until well combined and smooth.
