Taco Cornbread Casserole

Ingredients:

  • 1 package cornbread/muffin mix
  • 3 cups cooked taco-seasoned ground beef
  • 1 cup (8 oz) light sour cream
  • 1 cup shredded and divided colby jack, cheddar, or Mexican cheese
  • ½ cup chopped onion
  • 1 chopped medium tomato
  • 1 cup shredded lettuce

Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Prepare the cornbread mix according to package instructions.
  3. Spread half of the cornbread batter in the prepared baking dish.
  4. Top with the taco meat, sour cream, and half of the cheese.
  5. Sprinkle with the onion and tomato.
  6. Spoon the remaining cornbread batter over the filling.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Top with the remaining cheese and lettuce.
  9. Serve warm and enjoy!
