  • 8 oz can unsweetened crushed pineapple, drained
  • 2 tbsp chopped pecans
  • 1 cup mini marshmallows

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the sweet potatoes into chunks and boil them in water until tender, about 15 minutes. Drain and transfer to a large bowl.
  3. Mash the sweet potatoes until smooth. Stir in the golden raisins, agave (or honey, brown sugar), cinnamon, nutmeg, allspice, and crushed pineapple until well combined.
  4. Transfer the sweet potato mixture to the prepared baking dish. Sprinkle with chopped pecans and top with mini marshmallows.
  5. Bake in the preheated oven for 25 minutes, or until the marshmallows are golden brown and the casserole is heated through.
