Ingredients

  • 1 lb salad macaroni
  • 4 hard-boiled eggs, chopped
  • 1 small onion, finely diced
  • 3 celery ribs, diced small
  • 1 small sweet pepper (red or orange), seeded and diced small
  • Dressing: 2 cups light mayonnaise, 1/2 cup sugar, 1/8 cup yellow mustard, 2 tablespoons dill pickle relish, 1 tablespoon white vinegar or apple cider vinegar, 3/4 teaspoon celery seed, 1/4 teaspoon salt
  • Paprika for garnish

Directions

  1. Cook the macaroni according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled macaroni, chopped eggs, onion, celery, and sweet pepper.
  3. In a separate bowl, whisk together the mayonnaise, sugar, mustard, pickle relish, vinegar, celery seed, and salt.
  4. Pour the dressing over the macaroni mixture and gently stir to combine.
  5. Refrigerate for at least 1 hour before serving.
  6. Garnish with paprika before serving.
