Ingredients

  • 2 cups pecans, finely chopped
  • 1 1/2 cups self-rising flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine self-rising flour, sugar, brown sugar, and salt.
  3. Add in the vegetable oil, beaten eggs, and vanilla extract. Mix well.
  4. Fold in the finely chopped pecans.
  5. Pour the batter into the prepared baking pan.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing and serving.

Cook Notes

  • Self-rising flour can be made at home by mixing all-purpose flour with baking powder and salt.
  • Be careful not to overmix the batter to keep the bread tender.
