  • Cooking Time: 30 minutes
  • Total Time: 50 minutes

Ingredients

  • 1/2 kg mashed boiled potatoes
  • Salt to taste
  • 1 tbsp black pepper, divided
  • 1 egg
  • 1/2 cup all-purpose flour
  • 2 tbsp oil, plus more for frying
  • 1 cup chopped onions
  • 2-3 tbsp ginger garlic paste
  • 500g minced meat (any meat you prefer)
  • 1/2 tbsp red chili powder
  • 1 cup tomato puree
  • Capsicum, tomato, and fresh coriander leaves for garnish

Directions

  1. Prepare the Potato Mixture: In a large bowl, combine mashed potatoes, salt to taste, 1 tbsp black pepper, egg, and all-purpose flour. Mix until a dough-like consistency is formed.
  2. Cook the Meat Filling: Heat 2 tbsp oil in a pan over medium heat. Sauté onions until translucent. Add ginger garlic paste, minced meat, red chili powder, 1 tbsp black pepper, and salt. Cook until the meat is browned and cooked through. Add tomato puree and simmer until the mixture thickens. Set aside to cool.
  3. Form and Stuff the Pancakes: Divide the potato mixture into equal portions. Flatten each portion into a pancake, place a spoonful of meat filling in the center, and carefully fold the edges over to seal the filling inside, forming a stuffed pancake.
  4. Cook the Pancakes: Heat a little oil in a skillet over medium heat. Place the stuffed pancakes in the skillet, and cook until both sides are golden brown and crispy, about 4-5 minutes per side.
  5. Garnish and Serve: Garnish with chopped capsicum, tomato, and fresh coriander leaves. Serve hot.

Cook Notes

The key to perfect Stuffed Potatoes Pancakes is ensuring the potato dough is not too wet. Adjust the flour as needed to achieve the right consistency for shaping.
