Ingredients
- 2 pounds of colossal shrimps, peeled and deveined

- Shrimp Marinade:

Directions
- Marinate the Shrimp: In a bowl, combine shrimp with jerk seasoning, sofrito, and diced garlic. Set aside to marinate while you prepare the sauce.
- Prepare the Sauce: In a large skillet, sauté additional diced garlic and a pinch of jerk seasoning in a splash of oil until fragrant. Add the sofrito, fire-roasted tomatoes, and coconut milk. Bring the mixture to a boil, then reduce to a simmer.
- Cook the Shrimp: In another pan, sauté the marinated shrimp just until they are pink and opaque. Remove from heat immediately to avoid overcooking.
- Combine Pasta and Sauce: Add cooked fettuccine to the tomato and coconut milk sauce. Stir in Parmesan and Mozzarella cheeses until they melt and the sauce is creamy.
- Assemble and Serve: Layer the sautéed shrimp over the top of the fettuccine. Serve hot.

- If the sauce thickens too much upon cooling or reheating, simply stir in a little more coconut milk to achieve the desired consistency.
