Ingredients:
- 16 oz. boneless skinless chicken tenders
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp. lime juice
- 2 plum tomatoes, chopped
- 1 fajita seasoning packet
- Sliced reduced-fat pepper jack cheese
- 2 cups corn or tortilla chips
- Flour tortillas (I used La Tortilla Factory High Fiber/Low Carbs Wraps)
Directions:
- Place chicken tenders, sliced bell peppers, sliced onion, lime juice, chopped tomatoes, and fajita seasoning in the slow cooker.
- Mix well to ensure even coating of the seasoning.
- Cook on low for 4 hours or until the chicken is tender and cooked through.
- Preheat the oven broiler.
- Arrange tortilla chips on a baking sheet.
- Shred the slow-cooked chicken and place it on the chips.
- Top with sliced pepper jack cheese.
- Broil until the cheese is melted and bubbly.
- Serve over chips or in tortillas.
