Savory Slow-cooked Northern Beans

Ingredients:

  • 1 large onion, chopped
  • 1 Tbsp olive oil
  • 6 cloves garlic, chopped
  • 2 lb dry northern beans
  • 4 cups water
  • 4 cups chicken broth or stock
  • 1 tsp chicken bouillon paste (optional, for added flavor)
  • 1 cup baby carrots
  • Salt and pepper to taste
  • 1 Tbsp herbes de provence
  • 1 meaty ham bone or a couple of meaty ham hocks

Directions:

  1. In a skillet, sauté chopped onions in olive oil until translucent. Add chopped garlic and cook for an additional minute.
  2. Rinse and sort through dry northern beans, removing any debris.
  3. In a slow cooker, combine northern beans, sautéed onions and garlic, water, chicken broth, chicken bouillon paste (if using), baby carrots, salt, pepper, herbes de provence, and the meaty ham bone or hocks.
  4. Cook on low for 4-6 hours or until beans are tender.
  5. Remove the ham bone or hocks, shred any meat, and return it to the slow cooker.
  6. Adjust seasoning if needed and serve hot.
