Prepare Time
- Preparation Time: 20 minutes
- Cooking Time: 10 minutes
- Total Time: 30 minutes
Ingredients
- 2 cups cooked short-grain rice, cooled slightly
- 4 ounces mozzarella cheese, cut into small cubes
- 2 ounces pepperoni, sliced into small pieces
- 2 eggs, beaten
- 1 cup breadcrumbs
- Salt and pepper, to taste
- Marinara sauce, for serving (optional)
Directions
- Prep the Mixture: In a large bowl, combine the cooked rice, mozzarella cheese, and pepperoni. Season with salt and pepper to taste.
- Form the Balls: Take a portion of the rice mixture and form it into a ball, approximately the size of a golf ball. Make a small indent in the center and place a cube of cheese inside, then re-roll to encase the cheese completely.
- Coat the Balls: Dip each rice ball first in the beaten eggs, then roll in the breadcrumbs until fully coated.
- Fry: Heat oil in a deep fryer or a deep pan to 375°F (190°C). Fry the rice balls in batches, without overcrowding, until golden and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
- Serve: Serve the rice balls hot with marinara sauce for dipping.
Cook Notes
Chilling the rice balls for 10-15 minutes before frying can help them hold their shape better during cooking.
Variations
- Vegetarian Version: Omit the pepperoni and add chopped vegetables like bell peppers or mushrooms.
- Spicy Kick: Include a pinch of red pepper flakes in the rice mixture for extra heat.
Keto Version
For a keto-friendly version, replace breadcrumbs with crushed pork rinds and serve with a sugar-free marinara sauce.
Low-Carb Version
Similar to the keto version, use almond flour or coconut flour instead of breadcrumbs and ensure the marinara sauce is low in sugars.
