Ingredients

  • 1 package gnocchi
  • 1 lb ground beef
  • 1/2 medium onion, diced
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can Rotel
  • 1 packet of Taco Seasonings
  • 1/2 cup water
  • 1 cup sweet corn, canned or frozen
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded

Directions

  1. Cook the gnocchi according to the package instructions; drain and set aside.
  2. In a large skillet, cook the ground beef, onion, garlic, salt, and pepper over medium heat until the beef is browned.
  3. Stir in the taco seasoning, Rotel, and water. Bring to a simmer.
  4. Add the cooked gnocchi and corn to the skillet, stirring to combine.
  5. Sprinkle with Monterey Jack and cheddar cheese. Cover until the cheese melts.
  6. Serve hot with your desired toppings.
