OLD FASHIONED RICE PUDDING

Ingredients

  • 2/3 cup Minute Rice
  • 2 3/4 cups milk
  • 1/3 cup sugar
  • 1 tablespoon butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon nutmeg
  • Cinnamon, to taste
  • 1/2 cup raisins

Directions

  1. In a medium saucepan, combine the milk, Minute Rice, sugar, and salt. Bring the mixture to a boil over medium heat, stirring occasionally.
  2. Reduce the heat to low and add the butter, vanilla extract, nutmeg, and raisins. Simmer for 20-25 minutes, or until the rice is tender and the mixture has thickened to your desired consistency, stirring frequently.
  3. Remove from heat and let it cool slightly. The pudding will thicken more as it cools.
  4. Spoon into serving dishes and sprinkle with cinnamon to taste.

Cook Notes

  • If the pudding becomes too thick, thin it with a little milk before serving.
