Ingredients
- 1 cup ground almonds or almond flour
- 1/4 cup shredded coconut
- 1/4 cup powdered sweetener or your favorite sweetener
- 1/4 cup sugar-free peanut butter
- 1/4 cup unsalted butter, melted
- Liquid sweetener (sucralose or stevia) to equal 1/4 cup sugar
- 3.5 oz sugar-free white chocolate, or your choice of chocolate
- 2 tbsp unsalted butter, melted
- 2 tbsp heavy cream
Directions
- Prepare the Base: In a mixing bowl, combine ground almonds, shredded coconut, powdered sweetener, peanut butter, and 1/4 cup melted butter. Mix until well combined.
- Press into Pan: Line an 8×8 inch baking pan with parchment paper. Press the mixture evenly into the bottom of the pan.
- Make the Chocolate Layer: In a microwave-safe bowl, combine the white chocolate, 2 tablespoons of melted butter, and heavy cream. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
- Pour Over Base: Pour the melted chocolate mixture over the peanut butter base and spread evenly.
- Chill: Refrigerate the bars for at least 2 hours or until set.
- Cut and Serve: Once set, lift the bars out of the pan using the parchment paper and cut into squares.

For a firmer chocolate layer, you can add a little more chocolate or decrease the heavy cream slightly.
