Ingredients

  • Pastry:
    • 1 stick butter
    • 1 cup water
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 4 eggs
  • Filling:
    • 1 pint heavy cream
    • 1 package (3.4 ounces) instant vanilla pudding
    • ⅓ cup milk

Directions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a saucepan, melt butter over medium heat. Stir in water and vanilla extract, bring to a boil.
  3. Remove from heat and stir in flour all at once. Stir until dough comes together and forms a ball.
  4. Let dough cool slightly, then beat in eggs one at a time, until dough is smooth and shiny.
  5. Drop teaspoonfuls of dough onto prepared baking sheet, leaving space between them for puffing.
  6. Bake for 20-25 minutes, or until golden brown and puffed.
  7. While puffs cool, prepare the filling. In a bowl, whisk together heavy cream, pudding mix, and milk until thickened.
  8. Once puffs are cool, cut them in half and fill with whipped cream.
  9. Dust with powdered sugar and enjoy!
